pomegranate & chocolate

pomegranate & chocolate chip cookies with tazo passionfruit tea.

recipe:
1/2 cup butter, room temperature
1 1/4 cups brown sugar
1 egg
1 tablespoon vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup semi-sweet chocolate chips
1/2 cup pomegranate seeds
Sea salt, optional

Cream butter and sugar until light and fluffy. Add egg and beat well. Mix in vanilla extract. In a separate bowl, stir together flour, baking soda, and salt. Add to creamed mixture and stir just until combined. Stir in chocolate chips and pomegranate seeds. Refrigerate dough for 1 hour, or freeze for 30 minutes.

Preheat oven to 300 degrees. Drop 1/4 cup portions of dough onto baking sheets. Bake 12-15 minutes, until puffed and light golden. Sprinkle lightly with sea salt if desired. Remove to wire racks to cool completely.
