Add egg and beat well. Mix in vanilla extract. In a separate bowl, stir together flour, baking soda, and salt. Add to creamed mixture and stir just until combined. Stir in chocolate chips and pomegranate seeds. Refrigerate dough for 1 hour, or freeze for 30 minutes. Preheat oven to 300 degrees. Drop 1/4 cup portions of dough onto baking sheets. Bake 12-15 minutes, until puffed and light golden. Sprinkle lightly with sea salt if desired. Remove to wire racks to cool completely.
